It's different things, to be honest.

The majority of it has to do with the adrenaline rush you get during certain events of the game. With soccer (football to the rest of the world), there is normally only a few events throughout the game which count (goals, penalty kicks, free kicks, etc). With American football, there are many more events throughout the game that get people 'pumped up'. Here is a decent list:

1 Opening kickoff
2 Fumble or Interception (a turnover or forced change of possession); this happens so often in soccer that it's really meaningless
3 Touchdown; a culmination of all of the hard work during that particular drive, and, ultimately, the entire previous week's worth of practices
4 For defensive players, roughly every snap on defense; if you play on the defensive side of the football, adrenaline is a must-have to keep your motor going, as you rarely touch the football

EDIT: Don't forget the cheerleaders, either. They are a large part of American sports. In international sports, the cheerleaders are the fans in the stands. In American sports, we need sexy women leading the cheers. ;-)

Its the west coast offense, it's the NFC Easts pound the rock mentality, Its speed kills, Barry's thrills, Reggie's club, Cunninghams breaking out the pocket. Its Warren Moon, Doug Williams, Mark Bavaro, Steve Tasker, Ronnie Lott. The ice bowl, hiedi game, immaculate reception, the garauntee. It's the Kurt Warners, Doug Fluties, and He Hate Mes. Its Big Tuna, Mike Ditka, John Madden, Tom Landry, Vince Lombardi...... Its almost 80 years of Pro history, over 100 yrs counting the birthing years, Baseball may be the pastime, but football is the love affair fo life! I could go on....
